One thing many people struggle with is lunch time prep for work, school or even just for day to day life. Sometimes you stick to the basics because its quick and easy but often you may get bored of the same thing. We have a solution! Not only is it tasty (thanks to our cooking coconut oil) but it is also filling and healthy for those on that health grind! Check out how to make this delicious healthy couscous for your lunch time meal:
Ingredients,
1 Cup of couscous (you can get packed dry couscous from any supermarket)
1 carrot
1 stalk of small leek with green parts
2 beaten eggs
1 teaspoon full of House of Monara coconut oil
Some chili flakes
Lemon juice
Salt to taste
Method.
1) Make the couscous as per pack instructions and keep it aside
2) Shred the carrots into a small thin strip. Cut the leek into thin half-moons.
3) Heat the coconut oil in a non-stick frying pan over medium heat until the oil is hot then add carrots followed by leek.
4) Add some chili flakes and salt and mix well.
5) Then add 2 beaten eggs and cover the pan.
6) After 2 minutes open the lid and mix the mixture well until the eggs are shredded into small pieces. Then add the couscous to the pan and mix everything together.
7) Take the pan out from the heat and add some lemon juice and mix well. Your healthy, tasty lunch is ready.
How easy was that? You can have it hot or cold and the taste is just amazing. This is one of my 'go to's ' for when I am hungry and need something filling but don't want to feel bad after eating it. One thing I love about couscous is that you can add absolutely anything to it to make it your own and it will still taste amazing!
